Apple Pancake Pie

I made pancakes for Shrove Tuesday. They were good, very good. American style big fat fluffy pancakes.

Then I went too far. I thought "pancakes - good", "pie - good", "apple - good", therefore Apple Pancake Pie must be good. It wasn't. It took much much longer to cook than the recipe suggested and it tasted like toad in the hole but with apple sauce rather than sausage. It was almost a tough decision between custard or gravy.

Pumpkin Cake

I had a tin of pumkin. I'm rubbish at pastry so thought I'd see if the concept of Pumpkin Cake existed. It did! I used Gordon Ramsay's recipe from the Times Online. It's here. The problem with the recipe is that it massively underestimates the cooking time. Other than that it's great. I'd probably leave out the vanilla in the icing and boost the zest instead, but that's a personal choice.
